LalBrew New England is an ale strain selected specifically for its ability to produce a unique fruit-forward ester profile desired in East Coast styles of beer. A typical fermentation with LalBrew New England will produce tropical and fruity esters, notably stone fruits like peach. Through expression of a B-glucosidase enzyme, LalBrew New England can promote hop biotransformation and accentuate hop flavor and aroma. LalBrew New Englandâ„¢ exhibits medium to high attenuation with medium flocculation, making it a perfect choice for East Coast style ales.
 
  • Yeast Strain: Saccharomyces cerevisiae


 


 

 

Dry pitching is the preferred method of inoculating wort. This method is simpler than rehydration and will give more consistent fermentation performance and reduce the risk of contamination. Simply sprinkle the yeast evenly on the surface of the wort in the fermenter as it is being filled. The motion of the wort filling the fermenter will aid in mixing the yeast into the wort.

  • Aroma: Fruity, especially tropical and stone fruits
  • Fermentation Temperature: 64-77°F
  • Apparent Attenuation: 78-83%
  • Flocculation: Medium
  • Alcohol Tolerance: 9%
